One of the meals that had prepared us the Visiting Denmark was Nørrebro Bryghus Brewery Restaurant. The small beers Nørrebro factory founded in 2003, consists of the area where 8 different types of beer, a restaurant at the top and a bar are produced beer in the basement.
It specialty is a menu of pairing of Danish food with the beers produced in his factory micro. And being my first experience in pairings of beers the result was spectacular and not only in the quality of the food and beer but also our mood and desire of revelry. Read the rest of this entry »
Returning to El Bulli, nominated as the best restaurant in the world five years, where Ferran Adrià decided that he would close his restaurant to convert it into a Foundation, the Association that designs the rankings of the best restaurants, decided to get the title of best restaurant in the world at El Bulli, and appointing as successor to the restaurant Noma in Copenhagen.
The restaurant chef René Redzepi Noma, with two Michelin stars, is located in an old building in the District of Christianshavn which served as a warehouse for vessels that went to the Danish Islands. This new restaurant is chef Bo Bech. Bo Bech is a famous Danish chef has cooked some of the best restaurants in Europe and rose to fame in his country through a reality television show kitchen in Danish television. Bo Bech was previously in charge of the Paustian restaurant with one Michelin star in 2008. From that moment he preferred closer to the public and set up a bakery in Copenhagen where it only sold a single type of bread and eventually created the restaurant Geist. The restaurant Geist is an antithesis of his former restaurant, very informal, with walls dark and quite noisy offers simplified versions of their creations to make them accessible to all audiences. Open in October 2010 for the chef Jesper Moeller, has a clear objective, offering high-quality local food reducing to the maximum consumption of ozone-depleting emissions. In addition to focusing on the kitchen, another objective is the recycling of materials for use in their restaurant and bar of 700 m 2 in a spectacular location.
The Toldboden offers a rich menu of brunch and personally chef Jesper Moeller explained the philosophy of the restaurant. After a very interesting talk he entertained with a delicious meal tapas, pinchos and humeado salmon spectacular. During the meal we also drank beer and wines whose production philosophy is to minimize the emissions of polluting gases into the atmosphere. A sauce is very typical of Denmark Mustard Sauce, that Danes make this sauce in a peculiar manner. This sauce will use a little butter, a few tablespoons of flour, fish broth, milk, cream and mustard fish. With these small ingredients can make this sauce so tasty that much like in Denmark and used to accompany various foods such as meats.
We begin this mustard sauce by mixing the flour with the butter and then add the milk, which will then simmer until it boils. Finally add the cream and mustard. Continue stirring until you have the proper texture to get a good mustard sauce. Then we can serve the sauce with the food we most want.

In the center of Odense (Denmark) and very near the former home of Hans Christian Andersen, is the Den gamle Kro restaurant.
We discovered by accident one rainy night and blizzards, the kind that feel like being at home, next to the stove. But if you stay at a bed & breakfast alternatives are out and dinner snacks. And fortunately we decided to leave.

The Den gamle Kro is Nedergade (street Neder) and is one of the oldest buildings in Odense, with more than 300 years behind them.
When we entered the restaurant we were impressed: this is a really friendly site. The decor is a bit mixed but very well integrated with the different spaces that are part of the premises. The lighting, the details of presentation … Everything you need to create a charming atmosphere.
